Biltoki brings together the finest culinary professions in a hall dedicated to eating well and sharing. After joining Ma Boulangerie (Christophe Cressent), the Au Poulet Normand rotisserie and Caves Pierre Noble, we continue to recruit our future talents, Restaurants, specialty caterers and artisans for the Halles Agrivin. Opening planned for this summer 2022.

Maison Monville – Primeur

Maison Monville has been an institution since 1985. Quentin Monville, who bought the brand from his parents, is recognized as the benchmark Primeur in the Old Market district. Ancient vegetables, exceptional fruits, delicatessen section, Maison Monville carefully sources products from the orchard and garden and displays them on its stall with refinement. 

L’Écaillerie Rouennaise – Écailler

For the Onfroys, the sea has been a family affair for 4 generations. Already known for fish, Olivier, the boss, is tackling a new challenge since at the Halles Agrivin he will occupy a shucking stand: oysters, langoustines, seafood, shellfish, abalone... Olivier favors short circuits, which makes him leads to Étretat, Trouville-sur-Mer, Honfleur, Cherbourg or Brittany.

Maison Maréchal – Poultry house 

Present in numerous markets in Upper Normandy and Ile de France, Guy Burgess, manager of Maison Maréchal, is committed to an artisanal concept of exceptional French local products: whole poultry (chicken, guinea fowl, duckling, rabbit, cockerel). , quail, etc.), marinated skewers, poultry charcuterie, paupiettes and roasts. 

Chez Mathys – Fishmonger

At the head of Mathys, we find Guillaume Bracqbien, a young experienced fishmonger, who succeeds Bruno Richomme of the fishmonger Chez Bulot from Brion. Guillaume works with coastal fishing and French responsible fishing. He regularly sources his supplies from Granville, Trouville, Arromanches, Boulogne-sur-Mer… He will offer the market a range of fresh fish, smoked fish and snacks from the sea.
